Let’s get started! Preheat your oven to 375 degrees Fahrenheit. Then you will want to oil a 9 or 10 inch baking dish. This could be a deep dish pie pan or round casserole. In a medium sized bowl, mix turkey with onions, garlic, egg, mustard, ginger, cumin, coriander, cayenne, and salt. Sometimes you have to get your clean hands into the bowl to get a good mix.
Then press the mixture into the baking dish. Make it like a crust and push it up the sides at least 1 ½ to 2 inches.
Next steam your fresh spinach. You could use thawed frozen spinach for this also. Be sure and drain the spinach very well. Then set it aside and allow it to cool.
In a large bowl whisk the eggs. Next you will whisk in the half and half, onion, garlic, nutmeg, cayenne, salt and pepper. Stir in spinach, parmesan and Gruyere cheeses.
Now pour the egg mixture into the crust in the baking dish. Let’s bake for 40 minutes or until the center is set. It is okay for it to be a little wobbly in the center. Let it cool for 15 minutes before serving.

1 lb. ground turkey
1 tsp. salt
1 tbsp. Dijon mustard
1 tbsp. ginger paste
½ cup onion, chopped
1 clove garlic, chopped
1 tsp. cumin
1 tsp. coriander
¼ tsp. cayenne pepper
1 egg
Filling:
4 cups fresh spinach
¾ cup parmesan cheese
½ cup Gruyere cheese
¼ cup onion, minced
1 clove garlic, minced
1/8 tsp. nutmeg
1/8 tsp. cayenne
¼ tsp. Salt
1/8 tsp. freshly ground pepper
4 eggs
¾ cup half and half
Preheat oven to 375 degrees Fahrenheit. Oil a 9 or 10 inch baking dish. Mix turkey with onions, garlic, egg, mustard, ginger, cumin, coriander, cayenne, and salt. Then press into the baking dish like a crust pushing it up the sides at least 1 ½ inches.
