Apple Brussel Sprout Salad

This delicious Brussel sprout salad is a perfect combination of sweet, tart, and crunchy flavors.

The thinly sliced Brussels sprouts are tossed with tart apples, crunchy pecans, and a lemony dressing for a satisfying and healthy meal.

The Brussels sprouts grated into crisp bite size pieces and place into a large bowl.

The apples are added raw, so they retain their natural sweetness. Julienne the two small apples and add to the bowl.

The pecans add a bit of crunch and great nuttiness. Grind the pecans until crumbs and add to the mixture in the bowl. Thinly slice the green onions and add to the bowl.

Now mix the dressing as it ties everything together. In a small bowl, whisk together the olive oil, lemon juice, zest, Dijon mustard, salt, and pepper. Pour the dressing over the salad and toss to coat. Place the salad in the refrigerator for at least an hour before serving.

This salad is perfect for a light lunch or dinner. It can also be served as a side dish with your favorite protein.

Tips:

  • For a more tart salad, use a tart apple like Granny Smith.
  • For a more sweet salad, use a sweet apple like Honeycrisp.
  • If you don’t have pecans, you can use walnuts or almonds instead.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.

Apple Brussel Sprout Salad – You Won’t Recognize The Brussel Sprouts

Servings: 4 – 6
2 cups Brussels sprouts, grated
1 large apple, cored and julienned
2 green onion, sliced
1/2 cup pecans, chopped
1/4 cup olive oil
3 tbsp. lemon juice
1 tbsp. lemon zest
2 teaspoon Dijon mustard
Salt and pepper to taste.

In a large bowl, combine the grated Brussels sprouts, julienned apples, green onions and pecans.
In a small bowl, whisk together the olive oil, lemon juice, zest, Dijon mustard, salt, and pepper.
Pour the dressing over the salad and toss to coat.
Chill for an hour or more before serving.
