¼ cup flour
1/8 tsp. salt
1/8 tsp. pepper
4 tbsp. butter
2 oz. Prosciutto, thinly sliced
4 oz. gruyere Cheese
½ cup white wine
½ cup chicken broth
1 tbsp. brandy
30 cloves garlic unpeeled
4 chicken breasts, boneless, skinless
Preheat oven to 350 degrees. Combine salt, pepper, flour and lightly dust the chicken. Cook the chicken in the butter over medium-low heat, 2-3 minutes, browning. Move to a 2 quart baking dish. Cover chicken with slice of Prosciutto and cheese. Stir wine, chicken broth and brandy into pan juices and simmer until reduced. Pour into baking dish with breasts. Add garlic cloves. Bake uncovered 20 minutes or until chicken measures 165 degrees.
