Best Meatloaf Recipe
Serves: 6
½ lb. ground veal
½ lb. ground pork
½ lb. ground beef
1 oz. fat back or bacon, chopped
2 oz. prosciutto, finely chopped (optional)
4 slices stale white bread, crumbled
1 ½ tsp. oregano
1 tsp. crushed red pepper
1 ½ tsp. fennel seeds
1 tsp. ground cardamom
1 ½ tsp. cinnamon
½ cup flat leaf parsley, chopped
2 cloves garlic, minced
1 tsp. salt
2 large eggs, beaten
¼ cup parmesan cheese, grated
¼ cup whole milk
Using a large bowl, combine the meats, bread and spices, mixing well. In a small bowl beat the eggs, milk and cheese. Add the wet mixture to the meat mixture and mix well. Preheat the oven to 350 degrees. Lightly grease a 9 x 5 inch loaf pan or 9 x 13 inch baking dish. Form the mixture into a loaf and place into the baking pan. Bake for 1 hour or until the center reaches 160 degrees. Allow to rest 10 minutes before slicing and serving with brown gravy.
