When my Mother retired and had plenty of time, she started using this recipe for her bourbon balls.
3 ½ cups confectioner sugar
1 stick butter
1 pkg. 12 oz. semi-sweet chocolate squares or chips
¾ cup pecan halves
6-10 tsp. bourbon plus beaten egg white to make ¼ cup of liquid
2 tbsp. paraffin
Cream sugar and butter together. Add bourbon egg white mixture. Then form into balls. Place a pecan half in the center. Stick a toothpick in the side of each and freeze for 1 hour. Melt chocolate and paraffin over a double boiler. Dip the bourbon balls into the chocolate paraffin mixture. Allow the candies to cool on a cold plate. Keep the chocolate hot, while making the candies.
