Brenda’s Peach Crumble

Brenda's Peach Crumble

Brenda’s luscious peach crumble is a favorite with all of the guests she serves.

Servings: 8
1 cup walnuts, chopped
1 cup sugar
1 egg, beaten
2 pkgs. Vanilla instant pudding
2 cups milk
2 cups sour cream
2 cups fresh peaches
1 tbsp. fresh lemon juice

In a medium bowl, mix well the sugar and egg. Add walnuts to the mixture. Preheat oven to 350 degrees. Line baking pan with parchment paper. Spread the mixture on to the pan and cook for 10 to 15 minutes until slightly browned. Cool to room temperature and divide crumble mixture in half.
Put pudding mix, milk and sour cream in a large bowl. Beat at slow speed for 2 minutes. Meanwhile slice the peaches and lightly toss with lemon juice. Then fold the peaches into the pudding mixture and chill for several hours.
Put half of the crumble mixture in the bottom of 8 parfait glasses. Add the peach mixture and top with the other half of crumble. Refrigerate until served.
