This Caesar salad recipe with no egg dressing, I created after having food poisoning from the raw egg in the Caesar dressing. I can’t tell a difference in the taste.
Servings: 4
1-2 heads of romaine lettuce
2 cloves of garlic, chopped
2 tbsp. fresh lemon juice
2 tbsp. white wine vinegar
4 tbsp. extra-virgin olive oil
3 tbsp. anchovy paste
1 tbsp. Dijon mustard (optional)
Freshly ground pepper
3 tbsp. parmesan cheese, shredded
4 tbsp. croutons
In large salad bowl smash the garlic against the side of the bowl using a pestle or back of a spoon. Add the next 6 ingredients and whisk until thoroughly mixed. Tear the lettuce into pieces placing in the salad bowl. Gently toss the salad to coat the lettuce with dressing. Sprinkle the cheese and croutons on top. Note: The croutons can be made with stale bread cut into 1 inch cubes and browned in butter.)
