These carrot noodles are a healthy and tasty pasta type dish. They also cook quickly.
Servings: 4
1 ½ lbs. whole carrots
1 tbsp. extra-virgin olive oil
1 tbsp. soy sauce or tamari sauce (gluten free)
¾ cup toasted walnuts, coarsely chopped
Peel the carrots and create noodles by using a mandolin, julienne slicer or vegetable slicer. Heat the olive oil in a large skillet. Toss the carrot noodles in the oil for about 1 minute. Add the soy sauce and cook while stirring for a few more minutes or until the carrots become tender. Toss in walnuts and serve.
