Cauliflower Salad


This is a very rich salad that has a nutty flavor. It is best when served in small amounts.

Servings: 6
1 head of cauliflower broken into flowerets
1 cup black olives, drained and chopped
1 cup green onions, finely chopped
1 ½ cups mayonnaise

1 green pepper, sliced into rings
6 pimento slices
2 tomatoes, cut into wedges
Salt, to taste

Grate raw cauliflower flowerets. Add black olives and green onions. Mix all with mayonnaise and salt to taste. Serve with a pepper ring, pimento slice and tomato wedge. Chill before serving.
