Chicken Adobo is a healthy choice for a main course for your dinner. It is so easy to make this meal of tender chicken in a tangy sauce. I like serving this with rice and pouring the sauce on top.
Chicken Adobo is a Filipino recipe. This dish is addictive with its tender chicken, garlicy and tangy sauce. This tasty recipe is also easy to make. Start by making the marinade. Combine the first six ingredients in a container and mix. Then add your chicken and cover. Refrigerate overnight. Note: You may use boxed coconut milk and thicken it when cooking by adding ¼ cup corn starch mixed with ½ cup of water.
Remove the chicken setting aside. Strain the marinade discarding the solids. Save the marinade for later use.
Heat the oil in a large skillet over medium high. Add the chicken thighs, cooking 3 to 4 minutes on each side. Note: If you use boneless thighs or chicken tenderloins, cook 2 to 3 minutes on each side.
Add reserved marinade to the chicken and bring to a boil. Reduce the heat, cover and simmer for 12 minutes.
Serve the chicken and sauce over rice and sprinkle with freshly ground black pepper.

Servings: 4
1 cup rice vinegar
2 tbsp. tamari or soy sauce
3 garlic cloves, crushed
2 Thai chilies, halved lengthwise
2 bay leaves
2/3 canned light coconut milk
4 6 oz. bone-in chicken thighs, skinned
2 tbsp. olive oil
¼ tsp. black pepper
Combine first 7 ingredients in a container and refrigerate overnight. Remove chicken and strain marinade discarding solids. Heat oil in a skillet over medium high heat. Add chicken thighs, cooking 3 to 4 minutes on each side. Add reserved marinade to chicken and bring to a boil. Reduce heat, cover and simmer 12 minutes. Serve sauce with chicken and sprinkle with black pepper.
