4 chicken breasts, cooked, skinned and boned
2 tsp. curry powder
1 tsp. salt
Fresh ground pepper to taste
2 tbsp. lemon juice
½ cup walnuts, coarsely chopped
3 tbsp. candied ginger, soaked to remove sugar and then cut into slivered pieces
2 Granny Smith Apples, cut in 1 inch cubes
1 ½ cups seedless grapes
½ cup mayonnaise
¼ cup sour cream, or nonfat yogurt
Cut the chicken breasts into one inch cubes. Combine the curry powder, salt and pepper in a small bowl. Then stir in lemon juice mixing well. Pour over chicken cubes thoroughly coating. Add walnuts and ginger and refrigerate until ready to serve. Mix mayonnaise and sour cream and stir into chicken mixture. Carefully toss apples and grapes into chicken mixture. Enjoy!
