This flavorful chicken breast recipe causes you to want to eat more. The skinless flattened chicken fillet is rolled with a dab of butter inside. This creates a very tasty chicken roll which is breaded and sautéed until golden brown.
4 chicken breast skinless, boneless fillets
4 tbsp. butter
2 cups white bread crumbs
4 tbsp. olive oil
Place chicken fillet, skinned side up between two sheets of plastic wrap. With a mallet flatten the fillets as thin as possible without damaging. Place one tablespoon of butter on each fillet and season with salt and pepper. Tightly roll and refrigerate for ½ hour or longer. Roll in bread crumbs twice. Sauté in olive oil until browned and cooked through, about 8 to 10 minutes.
