Chorizo, Beans and Rice

Chorizo Beans and Rice

Chorizo, Beans and Rice is a nice spicy Southern recipe.  I make my own version using a mixture of types of beans along with Spanish Chorizo.

2 tbsp. olive oil
½ cup onions, diced
2 cloves of garlic, diced
8 oz. Spanish Chorizo, sliced
2 tsp. crushed thyme
2 bay leaves
½ tsp. salt
½ tsp. fresh ground pepper
1 (15 oz.) can chopped tomatoes
1 (15 oz.) can black beans
1 (15 oz.) can of three beans
3 cups low sodium chicken broth
½ cup cheddar cheese, shredded
Siracha Sauce to taste
4 cups of long grain rice cooked

Heat the olive oil and add the onions, cooking until translucent. Stir in garlic and cook for 30 seconds. Stir in chorizo and spices. Add the chopped tomatoes and chicken broth. Bring this to a boil and then reduce to a simmer, cooking for 45 minutes. Serve over rice, topped with cheddar cheese and Siracha Sauce to taste. This is very tasty with a piece of toasted baguette.
