A tasty slaw with tangy flavor from the vinegar and cilantro.
Servings: 4
½ cup cilantro leaves chopped
2 Tbsp. extra virgin olive oil
2 Tbsp. rice vinegar
2 scallions, thinly sliced
2 pickled jalapenos, chopped
½ head of cabbage finely shredded
Mix first five ingredients and then toss in cabbage. Salt and pepper to taste. Let sit 20 minutes before serving.
