Cod and Olive Tapenade Pasta

This delicious cod and olive tapenade pasta is a delicious and easy to make dish.  It is perfect for a weeknight meal.

This delicious and easy to make dish is perfect for a weeknight meal. The cod is cooked in a flavorful white wine sauce with a briny Greek olive tapenade and served over a bed of pasta. The dish is full of flavor and is sure to please everyone at the table.
Select a large skillet with high sides. Heat the skillet over medium high heat and add the olive oil.

Be sure and pat the cod fillets dry in paper towels. Cut the cod into bite size cubes. Add the cod to the skillet and brown on all sides. If you are not concerned over a heart healthy meal, you can use butter instead of the olive oil. The cod will be easier to brown and will have a delicious flavor. This will take about six minutes. Remove the cod from the pan and set aside for later. Add the chopped garlic to the skillet and let it cook for 30 seconds releasing the flavors. Pour the wine into the skillet and let it reduce by one half. That will also remove the alcohol but preserve the flavor.

Next add the tapenade and stir. Add salt and pepper. Stir in the pasta and add pasta water as necessary to thicken the sauce.

Add the cod and let all ingredients heat and mix well. Serve the pasta right away in individual bowls. Enjoy!

Servings: 2
Two 6 oz. fillets of cod
1 tbsp. olive oil
2 cloves of garlic, chopped
1 cup of dry white wine
¾ cup Greek olive tapenade
½ tsp. salt
¼ tsp. freshly ground pepper
12 oz. spaghetti pasta cooked Al dente

Heat a skillet and add the olive oil. Pat the cod fillets dry in paper towels. Cut the cod into bite size cubes. Add the cod to the skillet and brown on all sides.
