My mother would make Country Pie, a hamburger rice pie, back when we were kids in the 50’s and 60’s. We loved it and I still enjoy a new version of this recipe. See both recipes below:
This easy casserole has two versions. The first is the recipe my Mother used back in the 50’s or 60’s. She probably got the recipe from the back of the Minute Rice box. Where ever she got it, we as kids loved it because it was hamburger and cheese. I have updated the recipe and have included it below also.
The recipes have very simple ingredients, usually found in everyone’s kitchen. The first step is to make the crust of the pie. This is made from the hamburger, bread crumbs, tomato sauce, and onions. After mixing this well along with the spices, you mold it into a 1 2/2 to 2 quart casserole.
The filling for the pie is rice and tomato sauce or chopped tomatoes which I use in my updated recipe. I have also chosen not to use the instant rice and instead cook up two cups of brown rice.
The final step of the recipe calls for topping the pie with shredded cheddar. I have also used a combination of other types of cheeses for excellent results.
Cover the dish with a lid or foil and bake at 350 degrees for 35 minutes. Remove the cover and continue to cook for another 10 minutes or until the cheese has browned. Remove the casserole from the oven and let sit for 10 minutes before serving.

4 oz. Hunt’s Tomato Sauce
½ cup bread crumbs
1 lb. ground beef
¼ cup chopped onions
1 ½ tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
1 cup water
1 1/3 cups minute rice
8 oz. can tomato sauce
1 cup cheddar cheese
Combine first seven ingredients. Mold into a deep dish pie pan or cake pan. Then combine next three ingredients as filling. Top with cheese. Cover with foil. Bake 35 minutes at 350. Remove foil and bake until cheese is browned. Source: Moma

The same good hamburger rice pie flavor as the 20th Century with a few changes.
Servings: 6
4 oz. tomato sauce
½ cup bread crumbs
1 lb. ground beef
¼ cup onions, chopped
1 tsp. salt
1/8 tsp. fresh ground pepper
½ tsp. oregano
2 cups cooked brown rice
8 oz. tomato sauce
1 cup cheddar cheese, shredded
Preheat the oven to 350 degrees. Combine first seven ingredients. Mold into a 1 ½ to 2 quart deep dish pie pan or cake pan. Then combine the rice and tomato sauce and add as the filling. Top with the cheddar cheese. Cover with foil and bake for 35 minutes. Remove the foil and continue to bake until the cheese is browned about 10 minutes. Let sit for 10 minutes before serving.
