This refreshing and light cucumber mango mint salad is the perfect side dish for your next BBQ! It’s made with simple ingredients that you probably already have on hand, and it’s so easy to make. The cucumbers and mangoes are juicy and refreshing, the mint is fragrant and flavorful, and the lemon dressing is light and tangy. This salad is sure to be a hit with everyone at your party!

In a medium to large bowl, whisk together the lime juice, fish sauce, rice vinegar, chile-garlic sauce, and oil. 

Chop your English cucumber into one inch cubes. Peel your mango and cut it into one inch cubes.

Add cucumber, mango, and mint to the bowl and toss. Refrigerate the salad for one hour and serve.

Cucumber Mango Salad

Servings: 4
1 large English cucumber, cut into ½ inch cubes
1 mango, cut into ½ inch cubes
2 tbsp. lime juice
1 tbsp. fish sauce
2 tsp. rice vinegar
1 tsp. chili-garlic sauce
2 tbsp. extra-virgin olive oil
¼ cup mint chopped

In a medium to large bowl, whisk together the lime juice, fish sauce, rice vinegar, chile-garlic sauce, and oil. Add cucumber, mango, and mint to the bowl and toss.
