This easy bean and ham soup is packed with tender cannellini beans, smoky country ham, and a medley of aromatic herbs, all simmered to perfection in a rich and savory broth.
Pair this soul-satisfying soup with a warm slice of freshly baked cornbread, its golden crust and fluffy interior the perfect complement to the flavorful soup. Together, they create a symphony of textures and tastes that will transport you to a cozy Southern kitchen, where the aroma of home cooking fills the air and warmth fills the heart.
In a large pot add the oil, country ham, onion, carrots, and celery. Brown this mixture for about 5 to 10 minutes. Then add garlic, thyme, parsley, salt, and pepper. You can use powered garlic and dried thyme and parsley if you prefer.
Add the chicken broth and bring to a boil, then reduce heat and simmer for one hour, or until the vegetables are tender.
Add the cannellini beans to the soup and stir to combine. I like to take about 1 cup of the beans and smash them in a bowl and then add them to the soup. This will help thicken the soup. Heat for another 10 minutes and serve in bowls.
Tips
- For a richer flavor, you can use smoked ham instead of a ham hock.
- You can also add other vegetables to the soup, such as potatoes, corn, or green beans.
- This soup is even better the next day, so feel free to make a big batch and enjoy it for leftovers.
I hope you enjoy this recipe!
