Start by preheating your oven to 375°F (190°C).
Let’s make our sauce. You can buy ready made enchilada sauce but it is so easy to make. You should give it a try. In a large skillet, add oil and heat to medium. Then stir in the flour making a rue. Add seasonings and simmer until the desired thickness about 2 minutes. Now add water and bouillon or broth stirring constantly.
When the sauce is the right consistency, set it aside. Now wasn’t that easy!
Our next step is to brown the ground beef in a skillet. Break the ground beef up into small pieces. Then add your onion and continue to cook until it is browned.
Drain excess fat by pushing the meat to one side of the pan. Using tongs and paper towels soak up the extra grease.
Now add the garlic and sauté until softened. Stir in chili powder, cumin, oregano, salt, and pepper.
The next step is to warm the tortillas in an oiled skillet to make them pliable.
Now let’s put it all together. Spread a small amount of sauce on the bottom of the baking dish. Next prepare your tortillas by spreading a thin layer of cheese on tortillas. Fill tortillas with beef mixture and roll up. Place rolled enchiladas in the baking dish.
Pour the enchilada sauce over enchiladas and sprinkle with cheese.
Bake for 20-25 minutes, or until cheese is bubbly and golden brown. Serve hot with your favorite toppings. Enjoy!

1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon oregano
12 corn tortillas
2 cups shredded cheddar and Monterey Jack cheese
Salt and pepper to taste
Sauce
1/4 cup oil
14 cup flour
1 1/2 cups water
1 tbsp. Chicken bouillon
2 tablespoons chili powder
2 teaspoon garlic powder
1/2 teaspoon onion powder
