When we were kids our Mom always made these easy bourbon balls at Christmas time. I have continued to follow in that tradition.
The Easy Bourbon Balls # 2 makes about 5 dozen candies. They are well flavored with bourbon also. If you prefer less of a bourbon flavor, reduce the about of bourbon and the amount of confectioner sugar using the same ratio.
When you mix the ingredients together you will want to obtain a consistency of stiff paste that will hold its shape.
Next you will be adding the nuts. You can use pecans if you prefer. Just make sure you chop the nuts into pieces 1/2 inch or smaller. Mix well into the bowl of other ingredients.
Now place a sheet of wax paper on the counter and sprinkle with confectioner sugar. Form the dough into 1 inch balls and roll in the sugar.
Store in the refrigerator or keep cool. I also freeze mine for later use.

Easy Bourbon Balls #1
1 cup Vanilla Wafers, crushed
1 cup confectioner’s sugar, plus 3 tbsp. for rolling
¼ cup bourbon
1 cup black walnuts, chopped
2 tbsp. cocoa
1 ½ tbsp. white corn syrup
Mix all ingredients. Make into 1 inch balls and roll in confectioner sugar. Keep candies cool.
Easy Bourbon Balls #2
Over the years I have changed the Easy Bourbon Balls recipe. I found recipe #1 did not have enough bourbon. Also it did not use the full package of vanilla wafers. So I have created recipe #2.
1 box Vanilla Wafers, crushed (11 oz. box)
4 ½ cups confectioner’s sugar, plus 1/2 cup for rolling
1 cup bourbon
2 ½ cups black walnuts, chopped
5 tbsp. cocoa
4 tbsp. white corn syrup
Mix wafers, sugar, bourbon, cocoa, and syrup. Add nuts and mix well. Make 1 inch balls and roll into confectioner sugar. Keep candies cool.
