Easy Chicken and Dumplings – A Great Comfort Food

Chicken and Dumplings

This easy chicken and dumplings is easier than my Mother’s recipe.  But it is still just as tasty and is a perfect comfort food.

This chicken and dumplings recipe makes this wonderful comfort food easy to cook. 

You will start by chopping carrots.  You will need 1 cup.  Next chop ½ to 1 cup of celery.  Moma always put loads of celery into her chicken and dumplings.  I usually choose to only put ½ cup of celery into my pot.  Prepare your onion.  I like onion flavoring so I will use ½ cup of chopped onion. I put all of these into a bowl and set it aside for later. You will want about 3 cloves of garlic, chopped.

Now take 1 lb. of boneless, skinless chicken breasts.  I use chicken tenderloins.  Cut the chicken into cubes.  I like to use scissors.  I have found I can easily remove extra fat with the scissors also.

Now take a large stew pot and heat 2 tbsp. of olive oil.  We will also add 2 tbsp. of butter. Add your chicken and brown it on all sides.  It does not have to cook all of the way because we will do that later. Once it is browned, remove it from the pot and set aside.

Now add the vegetables to the pot.  We will cook these for about 5 minutes over medium heat. Then add the garlic and cook for 1 minute.  Stir the garlic and vegetables as it cooks and releases those good flavors.

Now add the thickener.  We will use 2 tbsp. of flour.  Stir it as you slowly let it brown.  Just like you would making a roux. You will slowly stir in 4 cups of chicken broth.  I like to use a low sodium broth to manage my salt intake.  We are going to want to stir this well mixing the flour so as not to have any lumps. We will simmer this mixture for 40 minutes, stirring often.

I am not making my own dumplings like my Mother would.  Instead I am using frozen biscuits.  I have slightly thawed my biscuits to make it easier to cut them in half. 

Now let’s spice this up.  I am adding 1 tsp. of sriracha sauce.  You can add your favorite hot sauce.  Then add 2 tsp. thyme, ¼ tsp. sage, ¼ tsp. black pepper, and 1 tsp. salt. Stir that well.

Add ¾ cup frozen peas  and 1 cup of half- half.  Keep your temperature at medium heat or below just enough for the mixture to come to a slow simmer.  Stir it well as it heats making sure it does not stick to the bottom.

Now let’s add our chicken to the mixture and let it finish cooking.  It is time for our biscuits. Slowly drop the biscuits that are cut in half onto the mixture.  You will cover the pan and let it simmer.  It is nice if your pan has a glass cover, so you can see in.  You do not want to be taking the lid off during this stage.  We will cook the dumplings for 15 minutes before we remove the lid.

After 15 minutes test your dumplings.  Poke a dumpling with a toothpick.  If it comes out clean the dumplings are ready.  If not cook it for a few minutes longer.  When the dumplings are ready serve them up.

Easy Chicken and Dumplings – A Great Comfort Food

Servings: 4 – 6
1 lb. boneless, skinless chicken breasts
2 tbsp. butter
2 tbsp. olive oil
½ cup onion, chopped
3 cloves garlic, chopped
1 cup carrots, chopped
½ to 1 cup celery, chopped
2 tbsp. flour
4 cups chicken broth
1 tsp. hot sauce
2 tsp. thyme
¼ to 1 tsp. sage
¼ tsp. freshly ground black pepper
1 tsp. salt
1 cup half and half
¾ cup frozen peas
Frozen biscuits – 8 to 12

Cut the chicken into 1 inch cubes. Using a large stew pot, turn the heat to medium and add the butter and oil. When the oil is hot add the chicken cubes and cook until all sides are browned. Then remove the chicken and set aside for later. Add the onions, carrots, celery and cook for 5 minutes. Then add the garlic and cook for 1 minute. Stir in flour and brown it for a couple of minutes. Next add the broth slowly, constantly stirring so as not to form lumps. Add the hot sauce, thyme, sage, pepper and salt. Stir in these spices and simmer for about 40 minutes. Now add the half and half and the frozen peas. Let this cook for about five minutes not allowing it to boil. Then add the chicken into the pot. Next place cut the biscuits in half and place on the top of the stew in the pot. Cover the pot and do not open for 15 minutes. After the 15 minutes, check to see if the dumplings are cooked by poking with a toothpick. If the toothpick comes out clean they are cooked and ready to serve. Enjoy!
