There is nothing better than a bowl of soup on a cool day. Try this easy fish chowder made with cod and potatoes.
Fish chowder is a great comfort food for a cool day. This recipe calls for cod, but you can substitute any firm fish. You may want to peel your potatoes or use Yukon gold that have a lighter peeling. Be sure and cut your potatoes into small one inch cubes so they will cook more quickly. You can always make your own fish broth from fish bones or shrimp shells. But when you don’t have any on hand you can use the clam broth.
When adding your half and half be sure not to allow the mixture to boil. Cook it over medium to medium low just allowing it to steam and no more than small bubbles at the edge. If the half and half mixture comes to a boil it will separate. We do not want that result.
I always add sherry to my chowder. It gives it some depth. Serve your chowder in a bowl with oyster crackers. You may want to add bacon bits on top of the bowl of chowder.

Easy Fish Chowder

Servings: 4
1 lb. cod, cut into 2 inch cubes
4 oz. bacon or salt pork, cut into small pieces
1 cup onion, chopped
2 – 8 oz. bottles of clam juice
¼ cup sherry
1 cup water
2 potatoes, cut into 1 inch cubes
Salt and pepper to taste
2 cups half and half
Cook salt pork in a large saucepan. Add onion and cook on medium until translucent. Add the clam juice, sherry, and water bringing to a boil. Stir in potatoes and simmer until tender. Add half and half slowly heating over medium temperature. When mixture is steaming but do not boil, add cod and simmer for 2 minutes. Salt and pepper to taste. Serve with oyster crackers.
