If you have a busy day, you will appreciate this Easy Lemon Chicken Meal as your dinner.  This healthy but tasty combination of chicken and vegetables will become a favorite.

This is a great meal to prepare ahead of time.  I choose to buy chicken tenderloins instead of the chicken breasts because they are already in strips and I only have to make several cuts to prepare.

You can prep your vegetables earlier in the day.  Be sure and put the cut up potatoes into cold water so they will not change color.  You can always substitute different vegetables as long as they are cut to a size that allows them to cook in the same time period as the other vegetables.  For instance snow peas are a great substitute. I also prepare my broccoli stalks and use them in the recipe. If you need assistance in preparing broccoli stalks, watch my video for instruction.

Put the oil, chicken, vegetables and spices into a large bowl.  Mix to coat well with the oil. 

You should use a sheet pan with sides or a broiler pan works great.  Lightly oil the pan to keep the chicken and veggies from sticking.  Now spread the mixture onto the sheet pan and bake at 425 degrees for 15 minutes. 

Turn and cook the other side for an additional 15 minutes or until tender.  Drizzle the meal with the fresh lemon juice and serve.

Easy Lemon Chicken Meal

Servings: 2
2 large skinless, boneless chicken breasts or equivalent in chicken tenderloins
1 ½ to 2 cups potatoes, cut into 1 inch cubes
1 ½ to 2 cups broccoli, flowerets cut into 1 ½ inch pieces
¾ cups onion, chopped
2 to 3 cloves of garlic, chopped
3 tbsp. olive oil
1 fresh lemon juice
Salt and pepper to taste

Preheat oven to 425 degrees. Cut chicken into 1 ½ to 2 inch pieces. Pour olive oil into large bowl. Add chicken, potatoes, broccoli, onion and garlic to the oil. Stir until ingredients are coated with oil. Lightly coat a rimmed sheet pan with olive oil. Spread all of the ingredients on to the sheet pan. Attempting to keep all the ingredients in a single layer. Bake for 15 minutes. Remove from oven and turn the meal. Return the meal to the oven and bake an additional 15 minutes or more until the broccoli and potatoes are tender. Drizzle the chicken meal with the lemon juice and serve while hot.
