Preheat oven to 350°F. Lightly grease 9×5-inch loaf pan with oil.

Add the eggs to a large bowl. Whisk the eggs until well mixed. Next add the maple syrup, baking soda, and rolled oats. Mix these ingredients well. Then add the bananas and mash with a potato masher. Stir in the chopped nuts.

Pour the batter into the loaf pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

Let the banana bread cool completely in the pan. Store bread in an airtight container on the counter for 2-3 days or in the refrigerator for up to a week.
