This is the healthiest dinner and the easiest. You will want to keep this recipe as a go to for busy nights. Start by preheating your oven to 375F/190.56C. Then take a 9 x 12 baking dish and oil it.
Prep your broccoli by rinsing it and cutting 1 inch in size florets. Next parboil the broccoli for 5 minutes. Rinse in cold water to stop the cooking process. Now rinse your quinoa and then spread it in the bottom of the baking dish. Lay the chicken on top of the quinoa and then lay the broccoli next.
Prepare your garlic by peeling, smashing and then mincing. Spread it along with the lemon zest on top of the casserole. Pour in ½ cup fresh lemon juice and the water. Sprinkle with salt and pepper to your taste. Now cover with Gruyere cheese. Parmesan cheese would be a good substitute if you need one. Now bake for 40 minutes. Enjoy!

1 ½ lbs. Chicken tenderloins
1 cup uncooked quinoa, rinsed
2 ½ cups broccoli florets, 1 inch parboiled
1 cup water
1 tsp. oil
½ cup fresh lemon juice
1 tsp. lemon zest
2 cloves garlic, smashed and minced
Salt and pepper to taste
1 cup Gruyere cheese
Preheat oven to 375F/190.56C. Oil a 9 x 12 baking dish. Spread the quinoa on the bottom of the dish. Next lay the chicken on top of the quinoa. Layer the broccoli florets on top of the chicken. Sprinkle with minced garlic and lemon zest. Pour in ½ cup fresh lemon juice and water. Add salt and pepper to taste. Cover the top with Gruyere cheese. Bake for 40 minutes.
