Start by preheating the oven to 350F/180C. Next oil a 9 x 10 baking dish. Wash and peel your potatoes. Slice the potatoes 1/3 inch thick so they will not break too easily. Boil the potatoes for 10 minutes just enough to partially cook.
Heat a large skillet or dutch oven. Add your olive oil and brown the ground beef breaking it into crumbles. Add the onions cooking until they are just tender and the ground beef is thoroughly cooked. Add the garlic and cook for another minute releasing the flavors.
Reduce the heat to medium and add the chopped salami. Drain the grease out of the skillet. Season with salt and freshly ground pepper. Next stir in the Ranch dressing. Add the pepperoncini and artichokes carefully stirring.
Place one layer of the potato slices in the bottom of the baking dish. Top with a layer of the meat sauce. Spread ½ of the green onions on top of the sauce. Sprinkle half of the shredded cheeses on this first layer.
Repeat this for the second layer. Bake for 40 minutes or until the cheese is brown and the center is bubbling. Let cool 10 minutes before serving. Variations: Eliminate the spicy salami and use mild pepperoncini for a less spicy taste. Use mozzarella and parmesan cheese for a flavorful combination.
