We’re talking layers of tender corned beef, tangy sauerkraut, melty Swiss cheese, all bound together with creamy Thousand Island dressing, and nestled in a bed of rye bread. It’s a flavor explosion in every bite, perfect for a weeknight dinner or feeding a crowd. First let’s make our thousand island dressing. In a small bowl, whisk together mayonnaise, ketchup, grated onion, pickle relish, and paprika.
Spray a 9×13-inch casserole dish with nonstick cooking spray. Layer the casserole dish with rye bread cubes. Then layer corned beef, thousand island dressing, sauerkraut, and shredded Swiss Cheese and repeat for a second layer.
Bake at 350 degrees, covered for 20 minutes. I use toothpicks to keep my cheese from sticking to my foil.
Then remove the foil and cook an additional 10 minutes until cheese is browned. Allow it to cool for a couple of minutes covered before cutting. Serve with a dill pickle. Enjoy!

1/2 cup mayonnaise
2 tablespoons ketchup
1 teaspoon onion powder
1 tablespoon sweet pickle relish
1/8 teaspoon smoked paprika

2 cups shredded Swiss Cheese
