Easy Seafood Stew

Today, we’re diving into a delicious and easy-to-make seafood stew packed with fresh shrimp, scallops, tuna, and cod.

Let’s get started on this delicious stew. Start by browning the pork belly or bacon in a large pot. Retain the fat rendered in the pot and set the pork aside.

Add the butter to the pot melt over medium heat. Next add the anchovies and garlic and cook until softened, about 5 minutes.

Pour in clam juice, fish broth, and chicken broth. Bring these to a simmer and cook for 10 to 15 minutes.

Next add shrimp, scallops, tuna, and cod to the pot. Season to taste with salt, and pepper. Remember the anchovies are salty, so you may not need to add salt.

Steam until the seafood is cooked through. When the shrimp curls and turns pink it will be cooked thoroughly. Ladle the stew into bowls and garnish with fresh parsley.

Serve with crusty bread or crackers.

Easy Seafood Stew – Your New Favorite Recipe

2 slices of pork belly or bacon cut into small pieces

2 oz. Can Anchovies in olive oil

1 tablespoon butter

2 cloves garlic, minced

1/2 pound shrimp, peeled and deveined

1/2 pound scallops, cleaned

4 oz. tuna steak, cut into 1-inch cubes

4 oz. cod fillets, cut into 1-inch cubes

8 oz. clam juice

1 cup fish broth

1 cup chicken broth

Salt and pepper to taste

Fresh parsley, for garnish

Instructions:

Brown the pork belly and set aside. Heat the butter in a large pot over medium heat. Add the anchovies and garlic and cook until softened, about 5 minutes.  

Pour in clam juice, fish broth, and chicken broth. Bring to a simmer and cook for 10 to 15 minutes.

Now add shrimp, scallops, tuna, and cod to the pot. Season with salt, and pepper.

Steam until seafood is cooked through.

Ladle stew into bowls and garnish with fresh parsley.

Serve with crusty bread or crackers.
