This green tomato pie is a great way to use your green tomatoes when you pick them before frost. My grandmother, MawMaw would make this pie every year. It is one of my favorites.
3 cups diced green tomatoes
1 tbsp. butter
1 tbsp. vinegar
½ tsp. salt
4 tbsp. flour
1 tsp. cinnamon
1 cup sugar
1 unbaked pie shell
Place tomatoes, butter, vinegar, and salt in a saucepan and simmer for five minutes. Mix flour cinnamon and sugar. Add to tomato mixture. Fill pie shell with tomato mixture. Bake at 350 degrees. This recipe doesn’t call for a top crust, but I think it is meant to have one. (per MawMaw)
