Grilled Chicken Breasts

I make grilled chicken breasts, using my rub to add to the flavor.  Then I cut the chicken into strips and freeze in jars for later use.  It is great for quick meals like salads or tacos.

1 lb. boneless chicken breasts
1 tbsp. olive oil
1 tsp. paprika
1 tsp. oregano
1 tsp. basil
1 tsp. rosemary
1 tsp. tarragon
1 tsp. lemon granules
1 tsp. salt
¼ tsp. black pepper

Mix the spices in a small bowl. Pat the chicken breasts dry. If they are large, slice through the thicker portion forming two pieces. This will help the chicken to cook evenly. Wipe the chicken with oil and then rub the spices on to all sides of the chicken. Preheat the grill to 450 degrees. Grill the chicken for two minutes and then turn grilling another two minutes. Reduce the heat to 400 degrees and continue to cook until the chicken breast measures 165 degrees in the thickest part, about 10 minutes. Allow the chicken to cool. Cut the chicken into strips and use on salads, in tacos or freeze in jars for later use.
