3 tbsp. extra-virgin olive oil
4 tbsp. butter, melted
2 cloves of garlic chopped
6 Yukon Gold Potatoes
Kosher salt
Fresh Black Pepper
Preheat the oven to 425 degrees. In small skillet melt butter, add garlic and slowly sauté. Slice each potato crosswise at 1/8 inch intervals, cutting down but not all the way through the potato. (If that should happen, you can always put a skewer through to hold the potato together.) Rub the outside of the potatoes with the olive oil and place on baking sheet. Bake for 40 to 60 minutes until done. Drizzle potatoes with garlic butter and salt and pepper to taste.
