Healthy Braised Salmon and Asparagus


Usually around Wednesday I start planning for my weekend meals. Depending on my mood, I will choose a recipe that is easy or challenging. I try to make most of my meals healthy, so I eat fish at least three or four times a week. So what did I choose to make: Braised Salmon and Asparagus.
This flavor packed meal is also easy to prepare. Basically there are two steps: First is making the sauce by sautéing your onion and garlic in olive oil. After adding your wine and reducing it by half, you stir in the anchovy paste. Now you are ready for step two. Place the asparagus and salmon topped with sliced lemons in the pan. Cover it tightly and braise in the oven at 300 degrees for about 10 minutes. You now have a tasty and healthy dinner.
