Radish, Cucumber Potato Salad

Do you love potato salad like I do?  Well I have found a healthy potato salad for you to try.  It is loaded with magnesium and potassium.  These are ingredients which are important to me to help ease my leg cramps and keep my blood pressure down.  I normally avoid potatoes because I am pre-diabetic.  However, this potato salad is full of healthy fiber.  When you eat fiber and then a carb such as potatoes, the fiber slows down the digestion of the potatoes. They do not turn to sugar so quickly.  This potato salad contains radishes, cucumbers, onions, avocado, fresh herbs, oh and yes potatoes.  Check out the recipe and see what you think!
