These pork chops are tender and juicy and full of flavor topped with a creamy onion gravy.

Take 4 boneless pork chops about 1 inch thick. Pat the chops dry with a paper towel. Heat a skillet and add 2 tbsp. of olive oil. Once the oil is heated add the pork chops. Season the pork chops with garlic, onion, salt and pepper on both sides.
Cook the pork chops for 3-4 minutes per side, or until browned. When they are 1 inch or more in thickness be sure to brown all sides to retain the moisture. If your chops are not reaching an internal temperature in the skillet of 145F while browning then remove the pork chops from the skillet and put in a baking dish. Continue to the cook the pork chops in the oven at 350F until the internal temperature reaches 145F.
Add the onion to the skillet and cook for 5-7 minutes, or until softened and translucent.
Add the flour and stir for about 1 to 2 minutes until it is slightly browned. You will want to cook it long enough to remove the flour taste. Add the chicken broth to the skillet and bring to a simmer. Then I like to whisk in half and half or heavy cream until smooth. Do not let your gravy boil at this point. Keep it at a simmer and stir frequently.
Return the pork chops to the skillet and spoon the gravy over top.
Serve immediately.

- For extra flavor, you can brown the pork chops in butter before dredging them in flour.
- Serve the pork chops and gravy with your favorite sides, such as mashed potatoes, rice, or collard greens.

1/4 cup heavy cream
