When I get up in the mornings, the first thing I do is fix my coffee or tea. Then I sit down with my dog, Darby and cuddle while I read my emails. The next step in my routine is to plan my day. A big portion of my day is determining what I will eat for my meals. It is only me to consider, so it should be pretty easy. I start by remembering if I have any leftovers or foods in the refrigerator that may expire soon. My next thoughts are what I may have in the freezer as leftovers. But usually I want to make something that I have not tried before. I keep plenty of seafood in the freezer, like cod, salmon, shrimp, scallops, and ahi tuna. I always have chicken breasts on hand and sometimes steak or ground beef. Since it takes about 8 hours to thaw my meat, I must make a decision by 9:00 a.m. It isn’t always easy to decide what I will want later, but I flip through my cookbooks and soon find a favorite or a new recipe I have wanted to try. Some people will plan their meals for a week at a time. I have found that my emotional nature tends to cause me to change my mind on what I want to eat. Then I end up wasting my ingredients. I tend to shop for my fresh vegetables once or twice a week to eliminate waste. So what did I end up choosing for my meal for today? Click “Go To Recipe” and you will see!
