Cod is a mild, flaky fish that takes beautifully to roasting or baking, and we’re going to amp up its flavor with a zesty topping that bursts with the essence of the Mediterranean. Think juicy tomatoes, briny olives, and a fragrant herb medley – it’s a symphony of taste in every bite!

So, are you ready to set sail? Let’s gather our ingredients and get started!

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Pat the fish dry and sprinkle both sides with salt and pepper. Place onion slices on the prepared baking dish and top with the cod.

Combine tomatoes, pepper, olives, capers, oil, garlic, oregano, lemon and crushed red pepper in a small bowl and toss to mix well.  Spoon the mixture on top of the fish.

Roast the cod for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork. The topping should be bubbly and slightly golden brown.

Serve the roasted cod immediately, with a side of roasted vegetables, rice, or your favorite salad. Opa!

Two 4 oz. Fillets of cod

¼ teaspoon sea salt

¼ teaspoon ground pepper

1 cup grape tomatoes, chopped

1/2 roasted pepper, chopped

½ medium red onion, halved and thinly sliced

1 cup green olives, pitted

¼ cup capers, preferably salt-packed, well rinsed, plus more for garnish

1 tbsp. extra-virgin olive oil

2 cloves garlic, chopped

2 tbsp. Fresh Lemon juice

1/2 tsp. oregano
