These miso chicken skewers are a great finger food as well as a satisfying dinner protein.

These miso chicken skewers are so tasty.  I have always received compliments and requests for the recipe when I have served this chicken.  You can use thigh meat or breast.  They both are delicious.

First soak your skewers in water over night.  You can choose not to skewer the chicken.  This cuts the prep time significantly.

In a small bowl mix your marinade by combining the vinegar, soy sauce (or liquid aminos), honey, miso, chili sauce, and garlic.  The miso can be red miso or white miso. 

Pat the chicken dry with paper towels and cut it into 2 inch wide strips.  Thread the chicken onto the skewers. 

Layout in a pan and brush the chicken with the marinade.  If not using skewers, just put the marinade and the chicken into a plastic bag.  Refrigerate for one hour. 

Pat the chicken lightly to remove some of the marinade and place on grill or under broiler for 10 minutes.  Turn the chicken after five minutes.  Enjoy!

Miso Chicken Skewers – A Great Appetizer or Dinner Idea

Servings: 6 to 8
½ cup white vinegar
4 tbsp. soy sauce
2-3 tbsp. honey
3-4 tbsp. miso
1 tbsp. chili sauce
2-3 cloves garlic, chopped
1 ½ lbs. chicken thighs or breast
24 skewers, soaked overnight in water

Mix first six ingredients. Pat chicken dry in paper towels. Cut chicken into 2 inch wide strips. Thread chicken strips onto skewer. Place in a pan and brush with miso mixture. Refrigerate for one hour. Lightly pat the chicken and broil for 10 minutes turning after 5 minutes. Serve while warm.
