Moma's Scalloped Potatoes

Moma’s scalloped potatoes are the best! They are truly a comfort food with plenty of cheddar cheese.

First I am going to peel 4 medium russet potatoes.  I am making this dish to serve 2 to 4 people.  Next I will boil my potatoes in salted water. When they are tender I will drain them and let them cool.

Now let’s put Moma’s scalloped potatoes together.  So I boiled the potatoes until they were tender but still firm.  I drained them and let them cool.

Preheat your oven to 350F/177C.  Now let’s oil a baking dish.  Mine is 8 x 8.  Slice the potatoes about ¼ inch and place one layer into the pan.   Then sprinkle with 1 tbsp. of flour. Add the second layer of potatoes and sprinkle with 1 tbsp. of flour and ¾ cup of cheddar cheese.  Then place the third layer of potatoes and sprinkle with 1 tbsp. of flour.  Pour one cup of half and half over top.  Sprinkle with 1 tsp. of salt and ¼ tsp. of freshly ground pepper.  Now cut 3 tbsp. of butter into small pieces and place on top of the potatoes.  Next spread the remainder of the cheese on the top of the potatoes.  Bake for 40 minutes or until the liquid is bubbly and the cheese is browned.

Moma’s Scalloped Potatoes

Servings: 4
4 cups russet potatoes boiled, peeled and sliced
1/4 cup half and half
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
Ground Pepper to taste
2 cups cheddar cheese, grated

Preheat oven 350 degrees. Lightly grease an 8 x 12 inch baking pan. Thinly slice the potatoes. Lay out one layer of potato slices in baking pan and sprinkle with 1 tbsp. of flour. Place the second layer of potatoes, sprinkle with 1 tbsp. of flour and 3/4 cup of cheese. Place the third layer and any additional potatoes and sprinkle with remaining 1 tbsp. of flour. Pour half and half over the potatoes. Cut butter into small pieces and spread across the top of the potatoes. Sprinkle with salt and pepper and spread the 1 ¼ cups of cheddar on top. Bake for 40 minutes or until liquid is bubbly and cheese is browned.
