A good old fashioned corn muffins recipe from my mother.
My mother didn’t make muffins often but when she did they were good. These are so easy to make. All you have to do is preheat your oven and pull out a large mixing bowl. Whisk the egg and then add all the ingredients. Mix the batter well. Oil a muffin tin and evenly pour the batter into six openings. Bake for 10 to 15 minutes.
¼ cup flour
2 tsp. baking powder
¼ tsp salt
2 tbsp. Sugar
¼ tsp. celery seed
¾ cup yellow corn meal
1 egg
2 tbsp. corn oil
1 cup milk
Mix well. Bake at 425 degrees for 10 to 15 minutes. Makes 6. Source: Moma
