Creamy Cheesy Broccoli Soup

Creamy Cheesy Broccoli Soup is a classic comfort food that is perfect for a cold day. It is made with fresh broccoli, cheddar cheese, and cream, and it is creamy and flavorful.

Servings: 4

• 3 tablespoon butter
• 1/2 onion, chopped
• 2 cups chicken or vegetable broth
• 3 cups broccoli flowerets
• 1 tbsp. ginger paste
• 2 cups half-half
• 2 cups cheddar cheese, shredded
• Salt and pepper to taste
• 1 tbsp. flour

Heat the butter in a large pot over medium heat.  Add the onion and cook until softened, about 5 minutes. 

Add the broccoli and broth to the pot.  Bring to a boil, then reduce heat and simmer for 15 minutes, or until the broccoli is tender.

Puree the soup in a blender or food processor until smooth.  Return the soup to the pot and stir in the half and half. Season with salt and pepper to taste.  Mix 1 tbsp. flour with ¼ cup of water.  Slowly add to the soup to thicken.

Heat the soup until it is heated thoroughly, about 5 minutes.  Add the cheese and stir until melted. Serve hot with crusty bread or crackers.

    Tips:

    • For a spicier dish, add a pinch of cayenne pepper to the soup.  You can also add other vegetables, such as carrots or celery.
    • You can also use different types of cheese, such as Monterey Jack or Gruyère.
    • To make your own broth, simply simmer chicken or vegetables in water for 30 minutes.
    • If you don’t have a blender or food processor, you can mash the soup with a potato masher.
    • You can also add other toppings to your soup, such as croutons, bacon bits, or shredded cheese.
