• 3 tablespoon butter
• 1/2 onion, chopped
• 2 cups chicken or vegetable broth
• 3 cups broccoli flowerets
• 1 tbsp. ginger paste
• 2 cups half-half
• 2 cups cheddar cheese, shredded
• Salt and pepper to taste
• 1 tbsp. flour
Heat the butter in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the broccoli and broth to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the broccoli is tender.

Puree the soup in a blender or food processor until smooth. Return the soup to the pot and stir in the half and half. Season with salt and pepper to taste. Mix 1 tbsp. flour with ¼ cup of water. Slowly add to the soup to thicken.
Heat the soup until it is heated thoroughly, about 5 minutes. Add the cheese and stir until melted. Serve hot with crusty bread or crackers.
Tips:
- For a spicier dish, add a pinch of cayenne pepper to the soup. You can also add other vegetables, such as carrots or celery.
- You can also use different types of cheese, such as Monterey Jack or Gruyère.
- To make your own broth, simply simmer chicken or vegetables in water for 30 minutes.
