Everyone needs to try this healthy greens, beans, and turkey soup. It is so healthy and easy to make. This is a great diet food and can be easily frozen.
Servings: 6 to 8
3 slices bacon, cut into small pieces
1 cup onions, chopped
4 cups chicken broth
2 bay leaves
2 tsp. thyme
1 tsp. cayenne
½ tsp. salt
1 bunch collard greens, rinsed and spines removed
15.5 oz. can cannellini beans, drained and rinsed
2 cups deli turkey, cut into 1 inch pieces
Cook bacon pieces until browned in a large pan. Add onions and cook on medium heat until translucent. Add chicken broth and bring to a boil. Add spices, bay leaves, cayenne, thyme and salt. Cut greens into bite size pieces and add to pan. Simmer soup for 1 ½ to 2 hours. Add rinsed beans and turkey. Heat for 5 to 10 minutes and serve. Serve with oyster crackers or a baguette.
