Benedictine Dip is great for vegetables or chips. It also can be a sandwich spread by adding more cream cheese. The recipe originated in Louisville Kentucky.
1- 8oz. pkg. cream cheese softened
1 medium cucumber grated fine, peeled and seeded
¼ medium onion, grated
2 tbsp. mayonnaise
2 to 3 drops green food coloring
2 to 3 drops hot sauce
Salt to taste
Grate or use food processor for the cucumber and onion. Pour the grated cucumber onion mix into a fine strainer sitting on a bowl to catch the juices. Using a spoon push the juices out of the mixture. Scrape the cucumber and onion mixture into a medium bowl. Add the remaining ingredients and mix well. This can be used for a dip for vegetables or chips. I save the cucumber onion juice and add to my ice water. Source: My grandmother, MawMaw
