Melt your butter in a large skillet over medium heat. Then add the onion slices. Once onions start to soften, turn heat down to medium-low and cook until golden brown, about 25 minutes, stirring often. Remove onions to a bowl and set aside.
Pat your pork chops dry with a paper towel. Sprinkle with salt, garlic powder, onion powder, and black pepper on both sides of pork chops. Add olive oil to the skillet and place over medium-high heat. Once hot, add the pork chops.

Cook pork chops until nicely browned on both sides, about 5 minutes per side. Remove from pan and set aside. (They don’t have to be all the way cooked at this point.)
Now sprinkle flour on the bottom of pan and cook 1 minute. Gradually whisk in broth, buttermilk, and water. Let come to a simmer and return pork chops and onions to the pan. Simmer 10 minutes or until pork chops are done. You should cook the pork chops until they reach an internal temperature of 145 F. Season to taste with thyme, salt and pepper.

Tips:
- To make sure the pork chops are cooked through, insert a meat thermometer into the thickest part of the chop. The internal temperature should be 145 degrees Fahrenheit.
- You can also use bone-in pork chops for this recipe. Just increase the cooking time by a few minutes.
- If you want a spicier gravy, you can add a pinch of cayenne pepper or red pepper flakes.

1 tsp. salt
1/2 tsp. black pepper
2 tbsp. all-purpose flour
2 tbsp. olive oil

1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 cup chicken broth
1/4 cup buttermilk or half-half
