This is not your usual sweet potato casserole recipe that contains brown sugar, cinnamon and marshmallows.  That is too sweet for me.  Instead I have created a recipe that has rich, hearty and warm spices to add depth and cheeses to add a nutty flavor.

Peel your potatoes and thinly slice. Start by preheating your oven to 375 F or 190.56 C.  Grease a 9 inch baking dish.

Make one layer of your sweet potatoes by overlapping the slices in the baking dish.  Then sprinkle with ½ of the quantity of the spices and flour.  Now do the same with the remainder of the potatoes with making a second layer.

Top the potatoes with the remaining spices and flour.  Then break the butter into pieces or melt it and put across the top of the casserole.  Next pour the half and half over the casserole.  Spread the Gruyere evenly across the top of the potatoes.  Then sprinkle the parmesan on the top.  Now cover the casserole with a lid or aluminum foil.  Then bake the casserole for 45 minutes.  Remove the lid and cook an additional 15 minutes or until the potatoes are soft.  Enjoy!

4 medium sweet potatoes, thinly sliced
1 cup half and half
2 tbsp. butter
2 tbsp. flour
2 tsp. cumin
¼ tsp. cayenne
½ tsp. salt
1/8 tsp. freshly ground pepper
1 cup Gruyere cheese, shredded
½ cup parmesan cheese, shredded

Preheat the oven to 375 F or 190.56 C. Grease a 9 inch baking dish. Make one layer of half the sweet potato slices in the dish. Then sprinkle with ½ of the quantity of spices and flour. Then make a layer of the remaining sweet potatoes. Sprinkle with the remaining spices and flour. Cut the butter into small pieces and spread across the top. Pour the half and half across the mixture in the casserole. Now evenly spread the Gruyere cheese onto the casserole. Finish with sprinkling the parmesan cheese across the top of the casserole. Cover and bake for 45 minutes. Then remove the lid and cook for an additional 15 minutes or until the potatoes are soft. Enjoy!
