This tasty peach cucumber salad has a zesty lime vinaigrette dressing.

Servings: 4
4 Persian cucumbers cut into 1 inch cubes
2 peaches, cut into 1 inch cubes
2 tbsp. extra-virgin olive oil
1 tbsp. white wine vinegar
1 tbsp. fresh lime juice, plus 2 tsp. of lime zest
1 tsp. honey
3 tbsp. basil leaves torn
Salt and pepper to taste

In a medium bowl whisk olive oil, vinegar, lime juice, zest and honey. Add cucumbers and peaches and toss in the dressing. Salt and pepper to taste and sprinkle with torn basil leaves.
