This quick and easy bratwurst sheet pan meal will make your life easier and provide a very tasty dinner.
I always begin my preparation of a meal by locating all of the containers and tools I will need. You will need a baking sheet, a cutting board, a large bowl, a large spoon, a spatula, a whisk, a sharp paring knife, a tablespoon, measuring cups and a meat thermometer.
Next I locate my ingredients and start washing the vegetables. I place the vegetables on a towel to drain. I now preheat my oven to 400 degrees. My next step is to put the oil, vinegar, brown sugar, and mustard in the large bowl. I will use my whisk to thoroughly mix these items.
Now it is time to prepare the vegetables. Start by peeling the potatoes. The potatoes should then be cut to about a one inch cube so they will cook through at the same time as the meat. Since it will be a few minutes before we use the potatoes, I place them into a small bowl of water to prevent them from browning. Cut the head of cabbage in half and then in half again. Remove the core and make ¼ inch wide slices of cabbage. Now peel your onion and cut into 1 inch cubes. Cut the green pepper in half and remove the seeds and stem. Cut the pepper into 1 inch pieces until you have about ½ half cup. Peel and chop three cloves of garlic. Drain the potatoes and add to the vinegar oil mixture. Add the remaining vegetables, cabbage, onion, green pepper and garlic to the vinegar oil mixture. Toss these until well coated.
Lightly coat the baking sheet with oil. The baking sheet should have sides. A broiler pan will also work. Place the bratwurst on the sheet spaced so they will not touch each other. Spread the vegetable mixture onto the baking sheet next to the bratwurst.
Bake for 20 minutes. Remove the sheet pan from the oven. Turn the bratwurst using a fork and puncturing the skin. Turn the vegetables and return to the oven and cook for an additional 10 minutes. Continue cooking until the bratwurst measure 165 degrees in the center using a meat thermometer. Meanwhile lightly spread the hot dog buns with butter and toast in a skillet. Serve with mustard on the bun and some of the vegetables along with the bratwurst. The remaining vegetables can be served on the side.

4 Bratwurst, uncooked
2 Russet Potatoes, cut into 1 inch cubes
¼ head of cabbage, ¼ inch slices
1 medium onion, cut into 1 inch cubes
½ cup green pepper, cut into 1 inch sections
3 cloves garlic, chopped
3 tbsp. olive oil
¼ cup apple cider vinegar
3 tbsp. Dijon mustard
1 tbsp. brown sugar
Salt and Pepper to taste
4 hot dog buns
½ tbsp. butter
Preheat oven to 400 degrees. In a large bowl, mix together oil, vinegar, brown sugar and mustard. Add potatoes, cabbage, onion, pepper, and garlic to the mixture and toss to coat. Lightly oil a baking sheet with sides. Place the bratwurst on the baking sheet spaced so as they are not touching. Evenly spread the potato cabbage mixture onto the baking sheet. Sprinkle with salt and pepper to taste. Bake in oven 20 minutes. Next turn all ingredients and pierce the bratwurst when turning. Cook an additional 10 minutes. Continue to cook until the internal temperature of the bratwurst measures 165 degrees. Lightly spread butter on hot dog buns and toast in skillet. Serve with bratwurst on bun with mustard and potato cabbage mixture on side.
