These quick and easy corn fritters are a comfort food for me. I will often prepare them for a late evening snack.
I make several variations of these corn fritters. For example, in the video I had been coating a pork Schnitzel with flour and then dipped in egg and milk mixture. In the final step I coated the cutlet in breadcrumbs. I had extra of all of these items, so I decided to make corn fritters.
They were delicious. So you can make some variations with substituting some of your flour with bread crumbs or corn meal. I will sometimes add chopped green peppers or chopped jalapenos to the recipe.

Quick and Easy Corn Fritters
These quick and easy corn fritters are a comfort food for me. I will often prepare them for a late evening snack.
Servings: 8 to 10
3/4 cup flour
¼ cup corn meal
1 egg
¼ cup milk
3 tbsp. olive oil + 3 tbsp. olive oil
1 cup corn kernels, frozen
¼ cup onion, chopped
1 tsp. hot sauce or ¼ tsp. cayenne pepper
Salt and pepper to taste
Beat egg and add milk and 3 tbsp. oil stirring to mix. Slowly add flour and corn meal while stirring. Stir in corn, onions, hot sauce, salt and pepper. Heat 3 tbsp. olive oil in skillet. Spoon out 3 tbsp. of mixture into skillet for each fritter. Cook until browned and then turn. Once both sides are browned remove from skillet. Continue to cook remaining batter until used. Place cooked fritters in warm oven until ready to serve.
