The combination of the juicy tomatoes, crunchy cucumbers, and peppery radishes is a delight to the taste buds. The salad is also very healthy, as it is packed with vitamins and minerals.

The salad is made with simple ingredients that are easy to find. You will need tomatoes, an English cucumber, radishes, extra-virgin olive oil, rice vinegar or white wine vinegar, Dijon mustard, salt, and pepper. You can also add some fresh mint leaves and scallions to the salad for an extra touch of flavor.

In addition to being delicious, this salad is also very healthy. The tomatoes are a good source of vitamins A and C, as well as lycopene, an antioxidant that has been shown to have cancer-fighting properties. The cucumber is a good source of vitamin K, which is essential for blood clotting. Radishes are a good source of potassium, which helps regulate blood pressure.

Refreshing Tomato, Cucumber and Radish Salad

Servings: 4
4 tbsp. extra-virgin olive oil
2 tbsp. fresh lemon juice
1 tbsp. rice vinegar
1 tbsp. Dijon mustard
Salt and pepper to taste
1 cup of radishes, thinly sliced
1 cup of cherry or grape tomatoes, cubed
1 cup English cucumbers, cubed
¼ cup mint, chopped
4 scallions thinly sliced

In a large bowl, whisk the olive oil, lemon juice, Dijon mustard, salt and pepper until well blended. Stir in the radishes, tomatoes, cucumbers, mint and scallions. Chill and serve.
