This is an easy recipe for roasted salmon and potatoes. It is also a very healthy meal.
Servings: 4
4 salmon fillets, 4 to 6 oz. each
4 medium potatoes, quartered
2 tbsp. olive oil
2 tbsp. fresh lemon juice
Salt and pepper to taste
Preheat oven to 425 degrees. Dip potato quarters in oil and place on baking sheet. Sprinkle the potatoes with salt and pepper. Bake the potatoes in the oven for 25 minutes. Pat salmon fillets dry with paper towel. Wipe the salmon fillets with olive oil. After potatoes have baked for 15 minutes take out of oven and place salmon fillets on the baking sheet. Sprinkle with salt and pepper to taste. Bake for 10 minutes. Both salmon and potatoes should be perfectly cooked. Remove to serving plates and drizzle potatoes and salmon with lemon juice. Enjoy!
