This is the southern sausage gravy and biscuits recipe that was handed down to me from my grandmother. However, they made their own sausage, homemade biscuits and got their butter and milk from their dairy cows.
Servings: 4 to 6
1 lb. breakfast sausage (I use uncured)
1 tbsp. butter
¼ cup all-purpose flour
2 cups whole milk
Salt and Pepper to taste
1 can of biscuits, buttermilk flaky, baked
Melt the butter in a skillet (my favorite is my iron skillet) over medium high heat. Add the sausage, breaking it up with the spatula as it browns. When the sausage is cooked, reduce the heat to medium and slowly add the flour while stirring. Brown the flour for about two minutes, and reduce the heat to medium low. Slowly add the milk while stirring. Continue to stir as the gravy thickens. If it should become too thick, just add some more milk a tablespoon at a time. Sprinkle with salt and pepper and stir. When thoroughly heated and thickened, spoon over a biscuit sliced in half. Enjoy!
